French Toast Bread Pudding

This is another interesting recipe. The French Toast is basically what they say it is toast. The Bread Pudding has a Flan like consistency. When put together they complement the other perfectly. I highly recommended this despite the long cook time. It takes a long time because of the egg mixture to cook which eventually becomes the Bread Pudding. For an added touch of taste add a pinch of cinnamon on top of the confectioners sugar.

Mahi Mahi with Mango-Vanilla Coulis

This is by far one of the most interesting meals I've ever had the joy of preparing and then eating. The Tahitian culture is rich with flavor.  The mango coulis was nicely complemented with underlying hints of ginger, which adds a minor kick. The  Mahi Mahi cooks golden brown--light and flaky. Add a small dollop of the coulis to top off this delicate fish. You can add garnish to enhance appeal and taste.  I recommend this recipe anyone who is fond of fish, or enjoys giving their taste buds a unique experience!
